Prepare fish

Rinse the whole red snapper inside and out under cold water and pat thoroughly dry with paper towels. Make 3 diagonal slashes on each side of the fish, about 1/2 inch deep; this helps the flavor penetrate and ensures even cooking.

Marinate

In a small bowl combine salt, pepper, lime juice, minced garlic, and chopped thyme or parsley. Rub this mixture all over the fish, including inside the cavity and into the slashes. Let the fish sit at room temperature for 15–20 minutes (or refrigerate covered for up to 1 hour). Pat the fish dry again just before coating to remove excess moisture.

In a shallow dish or rimmed baking sheet, whisk together the all-purpose flour, cornstarch, paprika, cumin, cayenne, salt, and black pepper until evenly combined.

Coat fish

Lightly dust the marinated, dried fish with the flour mixture, pressing the flour into the slashes and cavity so it adheres. Shake off excess coating — you want a thin, even layer rather than a thick paste. Reserve any leftover flour mixture for touch-ups.

Heat oil

In a large heavy skillet or a wok, add enough neutral oil to reach about 1/3 inch (8–10 mm) depth — roughly 3/4 to 1 cup for a 10–12 inch skillet. Heat over medium-high until shimmering and a small pinch of flour sizzles immediately (approximately 350°F/175°C).

Fry fish

Carefully lower the fish into the hot oil using tongs or a spatula, placing it away from you to avoid splatter. Reduce heat to medium so the oil stays hot but doesn't smoke. Fry the fish on the first side for 5–7 minutes without moving, until the edges are golden brown and the fish releases easily. Gently flip the fish (use two spatulas or a spatula plus tongs) and fry the other side for another 5–7 minutes, or until a thin metal skewer or knife inserted at the thickest part reaches 60–62°C (140–144°F) and the flesh flakes opaque.

Finish and rest

Transfer the fried fish to a wire rack set over a baking sheet or to a plate lined with paper towels to drain for 2–3 minutes. If using, add the tablespoon of butter to the still-hot skillet and let it melt and foam for 10–15 seconds, then spoon the melted butter over the fish for extra gloss and flavor. Sprinkle chopped fresh herbs and serve with lime wedges.

Serve the fried red snapper immediately while hot and crisp, paired with rice, fried plantains, a green salad, or a tangy salsa. Squeeze fresh lime over the fish to taste.
