Mix the meat

Place ground beef in a large bowl. Add grated onion, cold water, salt, black pepper, Worcestershire sauce, garlic powder, and smoked paprika. Use your hands or a fork to combine gently until just mixed — avoid overworking or the patties will be tough.

Form patties

Divide mixture into four equal portions (about 4 oz each). Form into thin patties about 4 inches in diameter and roughly 1/2 inch thick. Press a shallow dimple in the center of each patty to help them cook evenly.

Chill briefly (optional)

If the mixture feels warm or very soft, cover and refrigerate patties 10–15 minutes to firm up for easier handling.

Cook the patties

Heat a heavy skillet or cast-iron pan over medium-high heat and add 1 tablespoon neutral oil. When shimmering, add patties (work in batches if needed). Cook undisturbed 3 minutes until a brown crust forms, flip and cook 2–3 minutes more for medium. For cheeseburgers: place a cheese slice on each patty in the last 30–60 seconds, cover the pan briefly to melt.

Prepare sausage

If using sausage links with casing, remove casing and slice or crumble the sausage meat. If using sliced hot sausage links, slice into 1/4-inch rounds. In a separate skillet over medium heat, cook sausage until browned and cooked through, about 5–7 minutes. Transfer to a plate and reserve fat in skillet.

Sauté vegetables

In the same skillet with about 1 tablespoon of rendered fat (or add 1 tsp oil if needed), add the thinly sliced onion and bell pepper. Season lightly with 1/8 tsp salt and a pinch of black pepper. Sauté over medium heat until softened and caramelized in spots, 6–8 minutes.

Combine sausage with peppers & onions

Return cooked sausage to the skillet with onions and peppers. Stir to combine and cook together 1–2 minutes to marry flavors. If you want more heat, add hot sauce and stir.

Finish toppings

Taste and adjust seasoning. Add pickled jalapeños and toss briefly to warm them through (do not overcook or they will lose brightness). Remove from heat and keep warm.

For the Cheese & Buns

Toast the buns

Spread softened butter evenly on the cut faces of buns. In a clean skillet or on a griddle over medium heat, toast buns butter-side down until golden and slightly crisp, about 1–2 minutes. Remove and keep warm.

Assemble cheeseburgers (if using cheese)

Place a warmed cheese-topped patty on the bottom bun. Top with a generous spoonful of the sausage + pepper + onion mixture (for Hot Hamburger sausage style) or place sausage alongside for a hybrid cheeseburger. Add tomato slice if using, shredded lettuce, pickles, mustard and ketchup to taste. Cap with top bun.

For hot-sausage-forward sandwiches: pile the sausage + pepper + onion mixture directly onto the bottom bun, top with one or two patties (plain or cheeseburger), add condiments (mustard, ketchup, hot sauce if desired), pickles and lettuce. For cheeseburgers: keep sausage more as a topping rather than the star if preferred.

Serve immediately while hot with fries or chips. Leftovers can be refrigerated in an airtight container for up to 3 days.
