Prepare and season
Pat crawfish tails dry with paper towels. In a small bowl combine salt, black pepper and Creole/Cajun seasoning. Lightly toss tails with olive oil and sprinkle the seasoning mix so tails are evenly coated.
Cook crawfish
Increase heat to medium-high. Add seasoned crawfish tails in a single layer. Sear 1–2 minutes on the first side without moving so they get a light color, then flip and cook another 1–2 minutes until opaque and firm. Total cook time should be 3–4 minutes depending on tail size. Do not overcook.
Finish sauce
Lower heat to medium. Pour in white wine (if using) and lemon juice, scraping any browned bits from the pan for 30 seconds. Stir in remaining tablespoon butter and chopped parsley until sauce is glossy and coats the tails. Taste and adjust seasoning with additional salt or pepper if needed.
Serve immediately over toasted baguette slices or alongside steamed rice with lemon wedges. Garnish with extra parsley and a light sprinkle of Creole seasoning if desired.
Oyster Option
Preheat and prepare oysters
Preheat broiler to high (or oven to 475°F/245°C). Arrange shucked oysters on a rimmed baking sheet or in an oyster pan so they sit level. Pat oysters lightly to remove excess liquid, leaving them on the half shell.
Make topping
In a small skillet over medium heat melt butter with olive oil. Add minced shallot and cook 1–2 minutes until soft. Add minced garlic and cook 30 seconds. Remove from heat and stir in panko breadcrumbs, grated Parmesan, chopped parsley, lemon juice, hot sauce (if using), salt and pepper. Toss to combine; the mixture should be moist but crumbly.
Top oysters
Spoon about 1 tablespoon of the breadcrumb mixture atop each oyster, pressing lightly so topping adheres. If you prefer a saucier oyster, spoon a little of the butter from the pan onto each shell before adding crumbs.
Broil
Place oysters under the preheated broiler about 4–6 inches from heat. Broil 3–5 minutes until crumbs are golden brown, butter is bubbling and edges of oysters are just cooked through. Watch carefully to avoid burning.
