Prep vegetables
Heat a medium skillet over medium heat and add 1 tablespoon unsalted butter. When the butter is melted and sizzling, add the finely diced onion, green bell pepper, and celery (the classic 'holy trinity'). Sauté for 3–4 minutes until softened and fragrant but not browned.
Crumble the cooked boudin into the skillet with the vegetables and stir to combine. Cook 1–2 minutes to warm through, breaking up any larger pieces with a spoon.
Add the cooked white rice to the skillet and stir thoroughly to combine with the boudin and vegetables. Cook 1–2 minutes until the rice is evenly heated and the mixture is cohesive.
Once cooled enough to handle, scoop approximately 3 ounces (about 1/2 cup) of the mixture and form into tight balls using your hands. You should make 4 uniform boudin balls. Place formed balls on a baking sheet and refrigerate 10–15 minutes to firm up (this helps them hold together when breading).
Breading and Frying
One at a time, dredge each chilled boudin ball in the seasoned flour, shaking off excess. Dip into the egg wash, allowing excess to drip off, then roll thoroughly in breadcrumbs to fully coat. For a thicker crust, repeat the egg and breadcrumb step once more. Place breaded balls on a tray and let rest 5 minutes so coating adheres.
Pour vegetable oil into a deep heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (or enough to cover the balls). Heat the oil to 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown within 30–45 seconds.
Fry the boudin balls in batches (do not overcrowd) for 3–4 minutes per batch, turning gently as needed, until golden brown and crisp. Internal temperature of the filling should reach 165°F (74°C) and the center heated through. Use a slotted spoon to transfer cooked balls to a paper towel–lined tray to drain. Let rest 1–2 minutes before serving.
If you prefer to bake instead of fry: preheat oven to 400°F (200°C). Place breaded balls on a parchment-lined baking sheet, spray generously with cooking spray, and bake 18–22 minutes, turning once, until golden and heated through.
Dip (optional)
While the balls rest, whisk together mayonnaise, Creole mustard, hot sauce, and lemon juice in a small bowl until smooth. Taste and adjust hot sauce or mustard for more heat or tang. Serve alongside the boudin balls for dipping.
Serve hot: transfer the drained boudin balls to a serving plate, garnish with extra chopped parsley if desired, and offer the dip on the side. Recommend serving with pickles or a small salad to cut richness.
