Crust Preparation
Preheat the Oven
Preheat your oven to 325°F (163°C).
Mix the Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated.
Form the Crust
Press the crumb mixture into the bottom of a 9-inch springform pan, ensuring an even layer. Bake for 10 minutes, then remove from the oven and let cool.
Cheesecake Filling Preparation
Blend the Filling Ingredients
In a large mixing bowl, beat the softened cream cheese until smooth. Add the taro powder, granulated sugar, vanilla extract, and sour cream. Mix until well combined.
Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake for 55-60 minutes or until the center is set but slightly wobbly. Turn off the oven and let the cheesecake sit inside for 1 hour.
Cool and Refrigerate
Remove the cheesecake from the oven and let it cool at room temperature for another hour. Once cooled, refrigerate for at least 4 hours or overnight.

Prepare Sugar Mixture
In a small saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar dissolves.
Caramelize the Sugar
Increase the heat and bring the mixture to a boil without stirring. Allow it to cook until it turns a golden amber color, about 5-7 minutes.
Cool and Serve
Remove from heat and let the caramel cool slightly before carefully pouring it over the chilled cheesecake. Allow it to harden for a few minutes before slicing and serving.
