Made with fresh ginger and hand – pressed olive oil – this simple ginger soup is light and chilled with a slight bite (oh, and it's one of our favorites!).

Method

Hummus

1

Prepare the Chickpeas

If using dried chickpeas, soak them overnight in water. If using canned chickpeas, drain and rinse them before use.

2

Blend Ingredients

In a food processor, combine the chickpeas, fresh ginger, tahini, garlic clove, lemon juice, olive oil, salt, water, fresh parsley, and ground cumin.

3

Process Until Smooth

Blend the mixture until smooth and creamy. If the hummus is too thick, add a little more water or olive oil to reach your desired consistency.

4

Taste and Adjust

Taste the hummus and adjust seasoning as necessary, adding more salt, lemon juice, or ginger according to your preference.

5

Chill

Transfer the hummus to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Pita

6

Prepare Pita

While the hummus is chilling, prepare the pita bread by cutting each piece in half to create pita pockets.

7

Warm the Pita (Optional)

If desired, warm the pita halves in a toaster or on a skillet for a few minutes until slightly toasted.
