Method

Cooking the Pasta

Boil the Pasta

In a large pot, bring water to a boil. Add 2 cups of macaroni pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Making the Cheese Sauce

Prepare the Roux

In a medium saucepan over medium heat, melt 4 tablespoons of butter. Once melted, add 1 tablespoon of all-purpose flour and whisk constantly for about 1-2 minutes until it turns a light golden color.

Add Milk

Slowly pour in 2 cups of milk while continuing to whisk to avoid lumps. Bring the mixture to a simmer, allowing it to thicken slightly.

Incorporate the Cheeses

Remove the saucepan from heat and add 2 cups of shredded cheddar cheese, 1 cup of shredded gouda cheese, and 1 cup of softened cream cheese. Stir until all the cheese is melted and the sauce is smooth.

Season the Sauce

Add 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder to the cheese sauce. Mix well.

Combining and Serving

Combine Pasta and Sauce

In a large mixing bowl, combine the drained macaroni pasta with the cheese sauce. Stir until the pasta is evenly coated.

Optional Topping

If desired, preheat your oven to 350°F (175°C). Pour the mac and cheese into a greased baking dish. In a bowl, mix 1 cup of breadcrumbs with 1 cup of grated parmesan cheese and 2 tablespoons of chopped parsley. Sprinkle this mixture over the mac and cheese.

Bake

Bake in the preheated oven for 20-25 minutes until bubbly and golden on top. Remove and let it cool for a few minutes before serving.
