Preparing the Flatbread Base
Activate the Yeast
In a small bowl, combine warm water and sugar. Sprinkle yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.
Make the Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.
Knead the Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
Let the Dough Rise
Place the dough in a lightly oiled bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Assembling and Baking the Flatbread
Preheat the Oven
Preheat your oven to 475°F (245°C) and place a baking stone or baking sheet inside to heat.
Prepare the Flatbread
Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer to a piece of parchment paper.
Add Toppings
Slice the fresh figs and evenly distribute them over the rolled-out dough. Crumble the goat cheese on top, drizzle with honey, and sprinkle fresh rosemary.
Bake the Flatbread
Carefully transfer the flatbread (with parchment) onto the preheated baking stone or sheet. Bake for 10-12 minutes or until the edges are golden and crisp.
Finish with Balsamic Glaze
Remove the flatbread from the oven and drizzle with balsamic glaze before slicing and serving.
