Pan Seared Scallops

    Prepare the Scallops

    Pat the scallops dry with a paper towel to remove excess moisture. Season both sides with salt and black pepper.

    Sear the Scallops

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the scallops and sear for 2-3 minutes on each side until they have a golden crust. Add the butter in the last minute of cooking, spooning it over the scallops. Remove from heat and set aside.

Wild Mushroom & Spinach Risotto

    Prepare the Broth

    In a saucepan, bring the chicken broth to a simmer over medium heat. Keep it warm while you prepare the risotto.

    Sauté the Aromatics

    In a large pot, heat olive oil over medium heat. Add the shallots and garlic, sautéing until soft and translucent, about 2-3 minutes.

    Cook the Mushrooms

    Add the sliced wild mushrooms to the pot and cook for an additional 3-4 minutes until they are softened.

    Add the Rice

    Stir in the Arborio rice, coating it with the oil and sautéing for 1-2 minutes until slightly translucent.

    Add Broth Gradually

    Begin adding the warm chicken broth, one ladleful at a time, stirring frequently. Allow the liquid to be absorbed before adding more, continuing until the rice is creamy and al dente, about 18-20 minutes.

    Finish the Risotto

    Stir in the fresh spinach, grated Parmesan cheese, salt, and black pepper. Remove from heat and let it sit for a couple of minutes.

    Sauté Shrimp

    In a skillet, melt the butter over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant, about 2 minutes. Add the shrimp and cook until they turn pink, about 3-4 minutes.

    Add Brandied and Cream

    Pour in the brandy, stirring to combine, and let it simmer for 2-3 minutes to reduce slightly. Stir in the heavy cream and season with salt and black pepper. Simmer until thickened, about 3-5 minutes.
