For the Grilled Filet Mignon

    Prepare the Steaks

    Remove filet mignon steaks from the refrigerator and let them come to room temperature, about 30 minutes.

    Season the Steaks

    Rub the steaks with olive oil, then season generously with salt and black pepper on both sides.

    Grill the Steaks

    Preheat the grill to high heat. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

    Rest the Steaks

    Remove steaks from the grill and let them rest for about 5 minutes before serving.

For the Potato Pavé

    Prepare the Potatoes

    Peel and thinly slice the russet potatoes using a mandoline or a sharp knife.

    In a greased baking dish, layer the potato slices, seasoning each layer with salt, black pepper, and fresh thyme.

    Melt the butter and mix it with the heavy cream. Pour this mixture evenly over the layered potatoes.

    Cover the dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.

For the Balsamic Grilled Jumbo Asparagus
