Pork Tenderloin

Prepare the Marinade
In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and fresh thyme. Rub this mixture all over the pork tenderloin.

Marinate
Let the pork tenderloin rest at room temperature for 30 minutes, or refrigerate for up to 2 hours to enhance flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 204°C).

Whipped Sweet Potatoes

Cook Sweet Potatoes
Peel and chop the sweet potatoes into cubes. Boil in salted water for 15-20 minutes or until tender.

Whip the Sweet Potatoes
Drain the sweet potatoes and return them to the pot. Add butter, heavy cream, salt, and cinnamon. Use a potato masher or hand mixer to whip until smooth and creamy.
Broccolini

Prepare the Broccolini
Rinse the broccolini under cold water and trim the ends.

Combine Ingredients
In a saucepan over medium heat, combine apple cider and bourbon. Bring to a simmer.

Add Mustard and Thicken
Stir in grain mustard and let it cook for about 10 minutes, allowing it to reduce and thicken. Season with salt and pepper to taste.

Remove from heat and stir in butter until melted and the sauce is smooth.
