Method

Pork Tenderloin

    Prepare the Marinade

    In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and fresh thyme. Rub this mixture all over the pork tenderloin.

    Marinate

    Let the pork tenderloin rest at room temperature for 30 minutes, or refrigerate for up to 2 hours to enhance flavor.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F or 204°C).

    Grill the Pork

    Place the marinated pork tenderloin on the grill. Grill for about 15-20 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).

    Rest and Slice

    Remove from the grill, cover with foil, and let rest for 5-10 minutes before slicing.

Whipped Sweet Potatoes

    Cook Sweet Potatoes

    Peel and chop the sweet potatoes into cubes. Boil in salted water for 15-20 minutes or until tender.

    Whip the Sweet Potatoes

    Drain the sweet potatoes and return them to the pot. Add butter, heavy cream, salt, and cinnamon. Use a potato masher or hand mixer to whip until smooth and creamy.

Broccolini

    Rinse the broccolini under cold water and trim the ends.

    Sauté Broccolini

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add broccolini and sauté for 4-5 minutes until tender but still bright green. Season with salt to taste.

Grain Mustard Apple Bourbon Demi Glaze

    Combine Ingredients

    In a saucepan over medium heat, combine apple cider and bourbon. Bring to a simmer.

    Add Mustard and Thicken

    Stir in grain mustard and let it cook for about 10 minutes, allowing it to reduce and thicken. Season with salt and pepper to taste.

    Finish with Butter

    Remove from heat and stir in butter until melted and the sauce is smooth.
