Prepare the Lobster Tails
Begin by cutting the top of the lobster shells lengthwise with kitchen scissors. Gently pull the flesh out and lay it on top of the shell. This will help the lobster cook evenly and give it a nice presentation.

Make the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. In another bowl, whisk the egg and add ice water. Gradually mix the wet ingredients into the dry ingredients until you have a smooth batter.

Fry the Lobster Tails
Dip each lobster tail into the batter, ensuring it is well coated. Carefully lower it into the hot oil and fry for about 3-4 minutes or until golden brown. Remove and let drain on paper towels.
Jicama Slaw

Combine the Ingredients
In a large bowl, combine julienned jicama, grated carrot, shredded red cabbage, and chopped cilantro.

Make the Dressing
In a separate small bowl, whisk together lime juice, olive oil, salt, and black pepper until well mixed.

Toss the Slaw
Pour the dressing over the slaw mixture and toss gently to combine. Set aside to let the flavors meld while you prepare the lobster.
Island Jerk Butter

Mix the Jerk Butter
In a small bowl, mix the softened butter, jerk seasoning, minced garlic, lime zest, and honey until well combined.

Refrigerate the jerk butter for at least 30 minutes to allow the flavors to develop.
