Corn Relish

Method

Cumin Seared Grouper

  1. 1

    Prepare the Grouper

Season the grouper fillets with ground cumin, salt, and black pepper on both sides.

  2. 2

    Heat the Oil

In a large skillet, heat olive oil over medium-high heat until shimmering.

  3. 3

    Sear the Fish

Add the seasoned grouper fillets to the skillet and sear for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from skillet and set aside.

Black Bean Puree

  1. 4

    Combine Ingredients

In a blender, combine canned black beans, garlic cloves, cumin, lime juice, salt, and water.

  2. 5

    Blend to Puree

Blend until smooth and creamy. If the mixture is too thick, add a little more water to reach desired consistency.

  3. 6

    Serve

Transfer the black bean puree to a serving dish and set aside.

Avocado & Tomatillo Salsa

  1. 7

    Prepare the Ingredients

Dice the ripe avocados, tomatillos, and red onion. Chop the cilantro.

  2. 8

    Mix the Salsa

In a bowl, combine the diced avocados, tomatillos, red onion, chopped cilantro, lime juice, and salt. Stir gently to combine.

  3. 9

    Let it Rest

Allow the salsa to sit for a few minutes to let the flavors meld together.

Corn Relish

  1. 10

    Combine Ingredients

In a bowl, mix together fresh corn kernels, diced red bell pepper, diced red onion, chopped cilantro, lime juice, and salt.

  2. 11

    Taste and Adjust

Taste the corn relish and adjust the salt as needed.

  3. 12

    Serve

Transfer the corn relish to a serving dish and set aside.
