Custard Preparation

    Heat the Cream

    In a medium saucepan, pour 2 cups of heavy cream. Split the vanilla bean lengthwise, scrape the seeds into the cream, and add the pod as well. Heat over medium heat until it begins to steam, but do not let it boil.

    Whisk Egg Yolks

    In a mixing bowl, whisk together 5 egg yolks, 1 cup of granulated sugar, and a pinch of salt until the mixture is smooth and pale in color.

    Combine Mixtures

    Once the cream is heated, remove the vanilla pod and slowly pour the hot cream into the egg yolk mixture while whisking continuously to temper the eggs. This will prevent them from scrambling.

    Strain the Mixture

    Strain the custard mixture through a fine-mesh sieve into a clean bowl to remove any bits of cooked egg.

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Prepare Ramekins

    Place 6 ramekins in a baking dish. Pour the custard mixture evenly into the ramekins.

    Create a Water Bath

    Carefully fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. This helps cook the custard evenly.

    Bake

    Bake in the preheated oven for about 40-45 minutes, or until the custard is set but still slightly jiggly in the center.

    Remove the baking dish from the oven and let the ramekins cool in the water bath for about 30 minutes. Then transfer the ramekins to the refrigerator for at least 2 hours, or overnight.
