Method
Lobster Preparation

Prepare Lobster
Boil the lobsters in salted water for 8-10 minutes until cooked. Remove from water and let cool.

Prepare Filling
In a mixing bowl, combine crab meat, cream cheese, mayonnaise, Old Bay seasoning, lemon juice, and parsley. Mix until well combined.

Stuff Lobster
Once cool, split the lobster tails in half lengthwise. Remove the meat and chop it. Fold the chopped lobster meat into the crab mixture. Stuff the mixture back into the lobster shells.
Mac and Cheese Preparation

Cook Pasta
In a pot of boiling salted water, cook elbow macaroni according to package instructions. Drain and set aside.

Make Cheese Sauce
In a saucepan, heat heavy cream over medium heat. Add cheddar, Gruyère, and Parmesan cheeses, stirring until melted and smooth. Add truffle oil, salt, and pepper.

Combine
Mix the cooked macaroni with the cheese sauce until well coated.
Fried Leeks Preparation

Prepare Leeks
Slice leeks thinly and rinse under cold water to remove dirt. Pat dry.

Fry Leeks
In a large pot, heat vegetable oil over medium-high heat. Dredge leeks in flour mixed with salt and pepper. Fry in batches until golden brown and crispy. Drain on paper towels.
Final Assembly

Prepare Peas and Peppers
In a small saucepan, heat frozen peas until warmed through. Stir in roasted red peppers and cook for an additional minute.

Serve
On a plate, place a stuffed lobster half, a serving of truffled mac and cheese, a sprinkle of fried leeks, and a side of peas and roasted peppers. Enjoy!
