Preheat the oven to 425°F (220°C). Dice the potatoes into small cubes and toss them in olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.

While the potatoes are roasting, place prosciutto slices in a single layer on another baking sheet. Bake for 10-15 minutes until crispy. Remove and set aside.

In a bowl, mash the ripe avocado with lemon juice and salt until smooth. Set aside.

In a pot, bring water to a gentle simmer and add vinegar. Crack eggs into individual cups, then gently slide into the water. Poach for about 3-4 minutes or until the whites are set. Remove with a slotted spoon.
