Whisk eggs
Crack the 3 large eggs into a medium bowl. Add 2 tablespoons of whole milk, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is homogenous, slightly frothy, and pale yellow (about 30–45 seconds). Set aside.
Fillings
Prepare pan and cook aromatics
Place a nonstick 8–10 inch skillet over medium heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. Add the finely diced 1/4 small yellow onion and 1/4 diced red bell pepper. Sauté for 2–3 minutes, stirring occasionally, until softened and translucent but not browned.
Wilt spinach and warm sundried tomatoes
Add 1/2 cup roughly chopped fresh spinach and 2 tablespoons thinly sliced sundried tomatoes to the pan. Cook 30–45 seconds, stirring, until the spinach is wilted and any excess oil from the sundried tomatoes is distributed. Remove the filling mixture to a small bowl and wipe the pan lightly with a paper towel if there is excessive oil, leaving a thin coating for the omelet.
Cook Omelet
Sprinkle the reserved filling evenly over one half of the omelet. Scatter 2 tablespoons crumbled feta and 2 tablespoons shredded aged cheddar on top of the filling. Let the omelet cook another 20–30 seconds to warm the cheese and finish setting the eggs but avoid overcooking—the inside should remain tender.
Carefully fold the empty half of the omelet over the filled half using the spatula to form a semicircle. Gently press for 5–10 seconds to help the cheese melt and the omelet hold its shape.
Finish & Garnish
Slide the folded omelet onto a warm plate. Drizzle 1 teaspoon extra-virgin olive oil over the top and sprinkle 1 tablespoon finely sliced fresh chives. Serve immediately with the lemon wedge on the side for a quick squeeze of brightness.
