Strawberry Purée
Prepare strawberries
Wash the strawberries, remove the stems, and quarter any large berries so they’re uniform in size.
Sweeten and macerate
Place the prepared strawberries in a small bowl, add the granulated sugar and lemon juice, and stir gently. Let sit 5–10 minutes so the sugar draws out juices and softens the berries.
Blend and strain
Transfer the macerated strawberries and their juices to a blender or use an immersion blender. Blend until smooth (about 20–30 seconds). For a silkier milk, press the purée through a fine mesh sieve into a small bowl to remove seeds; use a spoon to help push it through. You should end up with roughly 3–4 tablespoons (about 45–60 ml) of purée for this recipe.
Milk Base
Assemble
Pour the cold whole milk into a tall glass. Stir in the vanilla extract.
Sweeten and combine
Add 2–3 tablespoons (30–45 ml) of the strawberry purée to the milk, depending on desired intensity and sweetness. Stir briskly until the purée is fully incorporated and the milk is evenly pink. Taste and adjust by adding more purée for stronger flavor or 1–2 teaspoons of sugar if you prefer sweeter milk.
Serve cold
If desired, add ice or top with cold milk foam. Stir again briefly to chill and combine.
