Prepare meat & aromatics

Chill and prep

Place the ground meats in the refrigerator for at least 30 minutes until cold; cold meat binds better. If you purchased cubes, partially freeze and then grind through a 3/8" plate for a coarse texture.

Finely grate or mince the red onion and garlic. Pat the grated onion between paper towels to remove excess moisture (this prevents a loose mixture).

Make the spice paste

In a small bowl combine hot pepper paste, sweet pepper paste (if using), Aleppo pepper, paprika, cumin, coriander, allspice, cinnamon, minced garlic and olive oil. Stir into a smooth paste. Taste a tiny bit on a spoon (or smear on bread) to confirm heat level; for milder sausage reduce hot pepper paste or Aleppo pepper.

If you want a truly mild version, omit or halve the hot pepper paste and increase sweet pepper paste and paprika to maintain color and flavor.

Mixing and binding

In a large bowl combine chilled ground beef and ground pork (if using). Sprinkle salt and black pepper evenly over the meat.

Add the grated onion, the spice paste, breadcrumbs, and ice water. Using clean hands, fold and knead the mixture vigorously for 3–5 minutes until it becomes sticky and cohesive (this develops the protein and gives the sausage its firm bite). If mixture feels dry, add 1 tsp more ice water; if too wet add 1–2 tbsp breadcrumbs.

Perform a flavor test: pinch off a 1 oz piece, form a small patty, and cook in a hot skillet 1–2 minutes per side until cooked through. Taste for seasoning and heat; adjust salt or pepper paste as needed and mix again briefly.

If using casings: fit your sausage stuffer with prepared casings, slide the casing onto the nozzle leaving a 6" tail. Fill the hopper with the meat mixture and feed meat into the casing, keeping even pressure. Avoid overfilling—aim for slightly firm, springy links. Twist into 4–5" links and tie or twist at intervals. Prick any large air bubbles with a sterile needle.

If not using casings: form the mixture into small logs or 3–4" patties (typical for Turkish 'sucuk' style often sliced; you can also make 4" sausages freeform). Press ends to seal and chill for 30 minutes to help them hold shape.

Cook and finish

Pan-fry: heat neutral oil or butter in a heavy skillet over medium heat. Add sausages or patties and cook 4–6 minutes per side, turning gently, until nicely browned and internal temperature reaches 160°F (71°C). If links are thick, cover for a few minutes to cook through, then uncover to brown.

Grill: preheat grill to medium-high. Grill links 3–5 minutes per side until charred spots appear and internal temperature reaches 160°F (71°C).

Baking (for larger batches): place links on a parchment-lined baking sheet and bake in a 375°F (190°C) oven for 20–25 minutes, turning once, until internal temp reaches 160°F (71°C).

Transfer cooked sausages to a plate lined with paper towels to rest 5 minutes. Serve warm with lemon wedges and a sprinkle of chopped parsley. For authentic serving, slice thin and serve as a side with yogurt, fresh bread, pickles and raw onion.
