Method
Oatmeal Base
Toast oats (optional)
Place a medium saucepan over medium heat. Add the rolled oats and toast, stirring frequently, for 2–3 minutes until they smell nutty. This step is optional but enhances flavor.
Once simmering, reduce heat to low and cook, stirring occasionally, for 6–8 minutes until oats are tender and the mixture is creamy. If texture becomes too thick, add up to 2–4 tablespoons more milk or water to reach your preferred consistency.
Flavor & Sweeten
When the oats are nearly done (last 1–2 minutes of cooking), stir in brown sugar, maple syrup, vanilla extract, ground cinnamon and ground cardamom (if using). Mix thoroughly so the spices and sweeteners dissolve and distribute evenly.
Fruit & Texture
While oats cook, prepare fruit and nuts. Slice the banana, dice the apple and lightly toast the walnuts or almonds in a small dry skillet over medium heat for 2–3 minutes until fragrant. Remove nuts from heat and rough-chop if desired.
Stir the diced apple and raisins (or dried cranberries) into the cooked oatmeal. The warm oats will soften the apple slightly and plump the dried fruit. Reserve the banana and toasted nuts for topping so the banana stays fresh.
Assembly & Finish
Divide the oatmeal into one serving bowl (recipe yields 1 generous serving). Spoon the warm oatmeal into the bowl and top with sliced banana, toasted chopped nuts and a dollop of Greek yogurt (or a splash of extra milk).
Finish with a light drizzle of honey (if using) and a sprinkle of lemon zest for brightness. Taste and adjust sweetness or spice to preference.
Serve immediately while warm.
