Combine dry ingredients

In a medium bowl whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly mixed and aerated.

Combine wet ingredients

In a separate bowl whisk the milk, large egg, and vanilla extract until smooth. Slowly whisk in the melted unsalted butter until incorporated.

Make batter

Pour the wet ingredients into the dry ingredients and gently fold with a spatula or whisk until just combined. Small lumps are fine — do not overmix. Let the batter rest 5–10 minutes to hydrate the flour and thicken slightly.

Soften Nutella (if needed)

If Nutella is stiff, transfer it to a small microwave-safe bowl and microwave in 10–15 second bursts, stirring between, until scoopable but not hot. If it's still thick, stir in up to 1 teaspoon milk to reach a spreadable consistency.

Heat pan

Heat a nonstick skillet or griddle over medium heat until hot (test by flicking a drop of water — it should sizzle). Lightly brush or wipe the surface with butter or oil.

Cook pancakes (first side)

Use a 1/4-cup measure to pour batter onto the hot skillet, keeping pancakes about 3–4 inches wide. Cook until bubbles form on the surface and edges look set, about 2–3 minutes.

Add Nutella and finish cooking

Spoon about 1 tablespoon of softened Nutella onto the center of each partially cooked pancake. Using the back of the spoon, gently spread the Nutella slightly, leaving a small border so it doesn't run out when flipped. Top with another 1/4 cup of batter to fully encase the Nutella (if you prefer a sandwich style) or simply flip carefully to finish cooking: flip the pancake and cook another 1–2 minutes until golden and cooked through. If adding banana slices, place 2–3 slices on top of the Nutella before adding the finishing batter or before flipping.

Cook remaining pancakes

Repeat the process with the remaining batter, wiping the skillet lightly with butter/oil as needed and keeping cooked pancakes warm on a plate covered loosely with foil or in a very low oven (about 90–100°C / 200°F).

Serving & Toppings

Stack pancakes on serving plates. Dust with powdered sugar if using, spoon additional warmed Nutella or a dollop of whipped cream on top, and sprinkle chopped hazelnuts over the stack. Serve immediately while warm.
