Prepare dry ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined and aerated.
Combine wet ingredients
In a separate bowl or large measuring cup, beat the eggs lightly, then add the whole milk, melted unsalted butter, and vanilla extract. Whisk until smooth.
Make the batter
Pour the wet mixture into the dry ingredients. Stir gently with a spatula or whisk until just combined; a few small lumps are okay. Avoid over-mixing to keep pancakes tender. Let the batter rest for 5 minutes while you preheat the pan.
Preheat and cook
Place a nonstick skillet or griddle over medium heat and brush or lightly rub with vegetable oil or a little butter. When the surface is hot (sprinkle a few drops of water — they should sizzle), drop 1/4 cup portions of batter onto the pan to form pancakes about 3–4 inches wide. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook the other side 1–2 minutes more, until golden and cooked through. Keep cooked pancakes warm on a plate loosely tented with foil while you finish the batch.
Berry Compote
While pancakes rest, make the compote. In a small saucepan combine the mixed berries, lemon juice, maple syrup (or sugar), and water. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly, about 6–8 minutes. Use the back of a spoon to crush larger berries to your desired consistency. Taste and adjust sweetness with a little more maple syrup if needed. Remove from heat and keep warm.
Toppings & Assembly
To serve, stack 2–3 pancakes per plate. Spoon warm berry compote over the pancakes. Add a dollop (about 2 tablespoons) of Greek yogurt next to or on top of the stack. Drizzle with maple syrup to taste (about 1 tbsp per stack recommended). Sprinkle toasted chopped nuts over the top if using, dust lightly with powdered sugar, and garnish with fresh mint leaves.
Serve immediately while pancakes and compote are warm. Leftover pancakes can be cooled and stored in an airtight container in the refrigerator for up to 2 days or frozen separated by parchment for longer storage. Reheat gently in a skillet or toaster oven before serving.
