Candied Pecans

    Toast and candy pecans

    Line a sheet tray with parchment. In a small nonstick skillet over medium heat, melt 10 g unsalted butter with 50 g granulated sugar, stirring until the sugar dissolves and begins to bubble slightly (2–3 minutes). Add 100 g pecan halves, 0.25 tsp kosher salt and 0.25 tsp ground cinnamon. Toss with a heatproof spatula so all pecans are evenly coated and continue to cook 1–2 minutes until glossy. Transfer to the prepared tray and separate with a fork as they cool. Let cool completely, then coarsely chop half for texture and reserve some whole halves for garnish.

Spiced Mascarpone

    Make spiced mascarpone

    In a bowl, whisk together 200 g mascarpone, 60 g sour cream (or crème fraîche), 2 tbs powdered sugar, 0.5 tsp ground cinnamon, 0.25 tsp ground cardamom, 0.5 tsp vanilla extract and 0.25 tsp fine sea salt until smooth and slightly airy. Taste and adjust sweetness or spices. Cover and refrigerate until ready; bring to cool-chilled (not room temperature) before plating so it holds shape on tartlet.

    Prepare tartlet shells

    Preheat oven to 200°C (400°F). On a lightly floured surface, roll thawed puff pastry to a 3–4 mm thickness. Cut into 8 circles approximately 9 cm (3.5 in) or into 8 squares for rustic tartlets. Place on a parchment‑lined sheet tray. Dock centers lightly with a fork leaving a 1 cm border to form a rim. Brush borders with beaten egg wash. Bake 12–16 minutes until puffed and golden. Remove and cool on a rack.

    Finish fruit

    While shells bake, halve 200 g seedless red grapes and thinly slice 100 g fresh figs if using. Toss fruit gently with 1 tsp granulated sugar and 0.5 tsp lemon zest to brighten. Set aside at room temperature.

Foie Gras

    Prepare foie gras

    Working with cold foie gras makes slicing easier. Trim any veins and sinew from the 400 g lobe: use a small knife to carefully remove visible veins, working quickly to keep the liver cold. Slice into 8 portions about 50 g each and pat dry with paper towels. Season both sides lightly with 2 tsp kosher salt and 1 tsp freshly ground black pepper, dividing evenly across pieces.

    Sear foie gras

    Heat a heavy skillet (cast iron preferred) over high heat until smoking point. Add 1 tbs neutral oil and swirl. Place 2–3 slices of foie gras in the pan without crowding. Sear 30–45 seconds per side until a deep golden crust forms; do not overcook — the interior should be tender and just warmed. During the last 10 seconds of the second side, add 15 g unsalted butter and spoon the foaming butter over the slices (baste) for flavor. Transfer seared pieces to a paper‑lined plate to drain and keep warm. Repeat with remaining slices. If excess fat accumulates, pour off into a heatproof container and reserve — a teaspoon can be used to finish tartlets if desired.

    Rest briefly

    Let foie gras rest 1–2 minutes — it will firm slightly making it easier to place on tartlets.

Assembly & Plating

    Place one cooled puff pastry tartlet on each plate. Using a small spoon or piping bag, add a generous tablespoon (about 20–25 g) of chilled spiced mascarpone into the center of each tartlet, spreading slightly but leaving a small well for the foie gras.

    Arrange a small cluster of the prepared fruit (grapes/figs) on top of the mascarpone or along one side of the tartlet to provide acidity and texture.

    Top each tartlet with a seared foie gras slice. Scatter chopped candied pecans and a whole pecan or two for visual contrast and crunch.

    Finish each plate with a light drizzle (about 0.25 tsp per tartlet) of balsamic reduction or aged balsamic, a pinch of sea salt flakes, and a few microgreens or mint leaves for freshness.

    Serve immediately while foie gras is warm and puff pastry is crisp. Provide small dessert fork or tasting spoon; recommended one tartlet per person as an appetizer.
