Vanilla Simple Syrup

    Make syrup (can be prepared ahead)

    Combine 0.75 cup sugar and 0.75 cup water in a small saucepan. Split the vanilla bean lengthwise, scrape seeds into the pan and add the pod (or add 1 teaspoon pure vanilla extract off heat later). Heat gently, stirring until the sugar dissolves. Bring to a low simmer for 1 minute, then remove from heat and let steep 15–30 minutes. Remove the vanilla pod (or stir in vanilla extract once cooled). Cool to room temperature and store in the fridge up to 2 weeks.

    Prepare passion fruit

    If using fresh passion fruit, cut one medium fruit in half and scoop out the pulp. Measure about 1 oz pulp (approx. the pulp of one half to a whole fruit depending on size). If passion fruit is very seedy and you prefer less texture, strain lightly through a fine mesh, reserving some seeds for texture if desired.

    Shake

    In a cocktail shaker, add 2 oz Ritual Zero Proof Gin alternative, the measured passion fruit pulp (about 1 fruit), 0.5 oz vanilla simple syrup, 0.5 oz fresh lime juice, and a generous handful of ice (about 1 cup). Shake vigorously for 12–15 seconds until well chilled and slightly frothy.

    Double strain into glass

    Double strain (through the shaker strainer and a fine mesh strainer) into a chilled Collins or highball glass filled with fresh ice to remove large seeds if you prefer a cleaner texture. Leave about 1.5–2 inches of headspace for the soda.

    Top with sodas

    Gently top the cocktail with 2 oz Simple Soda Co. Arizona Orange Soda. If you prefer a slightly lighter, longer drink, add 1 oz club soda after the orange soda (optional). Stir once gently with a bar spoon to integrate – avoid vigorous stirring to preserve carbonation.

    Garnish and serve

    Garnish with half a passion fruit (placed cut-side up) or a scoop of pulp and a thin lime wheel on the rim. Serve immediately with a straw.
