Baking Spice Simple Syrup

Make syrup

Combine 0.5 cup water and 0.5 cup granulated sugar in a small saucepan over medium heat. Add the cinnamon stick, allspice berries, cloves and grated nutmeg. Stir until sugar dissolves and bring just to a gentle simmer. Reduce heat and simmer for 5 minutes to allow spices to infuse. Remove from heat and let steep 20 minutes. Strain out solids through a fine mesh strainer and cool. Transfer to a jar and refrigerate. Yields about 3/4 cup. Use 0.5 oz per cocktail.

Prepare sage

Lightly slap 3 of the fresh sage leaves between your palms to bruise them and release aromatics. Reserve 1 leaf whole for garnish.

Dry shake (egg white foam)

In a cocktail shaker, add the brandy (2 oz), Mandarin Napoleon (0.5 oz), fresh lemon juice (0.75 oz), baking spice syrup (0.5 oz) and the 3 bruised sage leaves. Add the egg white (1). Do not add ice. Dry shake vigorously for 20–30 seconds to emulsify and build a stable foam. While shaking, press the sage leaves against the inside of the shaker briefly to increase flavor extraction.

Wet shake

Add a large handful of ice (about 1 cup) to the shaker. Shake vigorously for another 15–20 seconds until the shaker is cold to the touch and the foam has become dense and silky.

Double strain & serve

Double strain the cocktail into a chilled coupe or Nick & Nora glass (use a fine mesh strainer along with the shaker strainer) to remove ice shards and sage bits, preserving a smooth texture.

Garnish

Carefully place the reserved whole sage leaf on top of the foam. Express a lemon twist over the drink to release oils, then optionally rest it on the rim or float it beside the sage. For added aroma, you may briefly torch the sage leaf (optional).

Final

Serve immediately. The resulting cocktail is savory and aromatic with brandy warmth, bright citrus, baking spice sweetness and a soft sage finish.
