    Chill glass

    Place a martini/chilled coupe glass in the freezer for at least 5 minutes or fill it with ice water while you prepare the cocktail to chill it.

    Combine ingredients

    In a cocktail shaker, add Haiken Yuzu Vodka (2 oz), Licor 43 (1 oz), Thatcher's Watermelon liqueur (1/2 oz), fresh pineapple juice (1 oz), fresh lime juice (1/2 oz), and simple syrup (1/4 oz) if you prefer a touch more sweetness.

    Add ice and shake

    Fill the shaker with ice (about 6 cubes), secure the lid, and shake vigorously for 12–15 seconds — until the shaker feels very cold to the touch and the exterior has a light frost.

    Double strain

    Discard ice/water from the chilled glass. Double-strain the cocktail into the chilled martini or coupe glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any pulp from the pineapple juice for a silky texture.

    Taste and adjust

    Taste a small sip. If the cocktail is too tart, add 1/4 oz more simple syrup to the remaining shaken mixture (or quickly stir in and re-pour). If too sweet, add 1/4 oz more fresh lime juice and give a quick stir.

Garnish & Serve

    Garnish the cocktail with a thin lime wheel placed on the rim and a pineapple leaf or thin wedge laid across the rim or floated gently on the drink.

    Serve immediately while cold. Recommend serving as a martini-style aperitif or a light dessert cocktail.
