Blueberry Puree

    Make the puree: combine 1 cup fresh blueberries and 2 tablespoons granulated sugar in a blender or food processor.

    Add 1 tablespoon fresh lemon juice and 2 tablespoons cold water to help the mixture blend smoothly.

    Blend on high until very smooth, about 30–45 seconds. If you prefer a silkier texture, pass the puree through a fine mesh strainer into a bowl, pressing with the back of a spoon to extract as much liquid as possible. Discard solids.

    Transfer puree to an airtight container and chill while you prepare the rest of the cocktail. Makes roughly 3–4 ounces; use 0.75 oz per cocktail.

Cocktail Assembly

    Chill glass and prepare ice

    If desired, chill a rocks or highball glass in the freezer for 5–10 minutes. Prepare about 1 cup of crushed ice and have chilled tonic water ready.

    Build the drink

    In a cocktail shaker (no need to ice-wet shake because we will lightly mix), add 2 oz bourbon or rye and 0.75 oz blueberry puree. Add 3 dashes black walnut bitters.

    Add a handful of crushed ice to the shaker (about 1/2 cup) and stir gently for 10–15 seconds to lightly chill and integrate flavors without diluting too much.

    Fill the chilled glass with crushed ice (about 1 cup). Strain the whiskey–blueberry mixture over the crushed ice, leaving some headspace for tonic.

    Top with 2.5 oz chilled tonic water, pouring gently to preserve carbonation. Give a gentle stir once to combine.

    Garnish with a lemon wheel and a sprig of mint, lightly slap the mint to release aromatics before placing it on the drink.

Smoking & Finish

    Prepare smoking materials: place about 1 teaspoon wood chips in the smoking gun tray or on a small heatproof surface if using a torch method. Light/ignite according to device instructions to generate smoke.

    If using a smoking gun: cover the finished cocktail with an inverted mixing glass or dome, insert the gun nozzle under the cover and fill the glass with smoke for 8–12 seconds, then remove the gun and keep the cover in place for 20–30 seconds to infuse the top of the drink.

    If using a torch: carefully ignite the wood chips on a piece of foil until they smoke, then capture smoke under an inverted glass or directly wave the smoke over the drink for 10–15 seconds. Exercise caution and follow safety procedures.

    Remove the cover, present the drink so the guest inhales the smoke aroma, then serve immediately.
