    Prepare shaker

    Add 2 oz Ritual Zero Proof Gin Aperitif, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, and 2 dashes orange bitters into a cocktail shaker.

    Add ice and rosemary

    Bruise the rosemary sprig lightly between your palms to release oils and add the sprig to the shaker. Fill the shaker with ice (enough to chill and dilute properly).

    Shake

    Shake vigorously for 12–15 seconds until the shaker is very cold and slightly frosted. This chills and mixes the ingredients and mellows the rosemary aroma into the drink.

    Double strain

    Using a Hawthorne strainer and a fine mesh strainer, double strain the cocktail into a chilled coupe or martini glass to remove ice shards and rosemary bits.

Garnish & Finish

    Express the oils: hold the lemon twist over the surface of the cocktail and give it a quick squeeze to release the citrus oils, then rub the peel along the rim of the glass.

    Garnish: place the expressed lemon twist on the rim or float it on the surface and perch the bruised rosemary sprig upright in the drink for aroma.

    Optional: for added aroma, briefly torch the rosemary sprig on both sides with a culinary torch (carefully) before placing it in the drink to release a warm smoky, resinous scent.
