Method
Prep
Measure out 1 oz of kaluga caviar and keep it chilled in its tin until just before serving. If caviar is in a sealed tin, open gently and set the tin in a bowl of crushed ice to keep cool.
Make the Scrambled Eggs
Whisk eggs
Crack 4 large eggs into a medium mixing bowl. Add 2 tablespoons whole milk and a pinch (about 1/4 tsp) of the fine sea salt. Using a fork or whisk, beat vigorously until yolks and whites are fully combined and the mixture is slightly frothy — roughly 20–30 seconds.
Heat pan
Place a nonstick or well-seasoned small sauté pan (8–10 inch) over low to medium-low heat. Add 2 tablespoons unsalted butter and let it melt gently. The butter should foam but not brown — you want gentle, even heat.
Cook gently
Pour the beaten eggs into the warm butter. Allow them to sit undisturbed for 10–15 seconds until the edges just begin to set. Using a silicone spatula, slowly push the set edges toward the center, creating large, soft curds. Continually move the eggs every 10–15 seconds, keeping the heat low so the curds remain creamy. If the pan seems too hot at any point, lift it off the burner for a few seconds to cool, then continue.
Finish eggs
When eggs are mostly set but still glossy and slightly runny (after about 3–4 minutes total, depending on heat), remove the pan from the heat. Stir in the remaining fine sea salt (if needed to taste), 1/4 tsp freshly ground black pepper, and the snipped chives. The residual heat will finish cooking the eggs to a soft, silky texture.
Assemble & Serve
Spoon the scrambled eggs onto warmed plates or directly onto warm buttered brioche/toast (if using). Shape into a neat mound with the spatula to create a small well on top.
Using a mother-of-pearl spoon or very small spoon, gently place 1 oz of kaluga caviar in the well atop the eggs. Avoid metal spoons to prevent affecting caviar flavor.
