Method
Foie Gras
Prep
Remove the foie gras from the refrigerator 20–30 minutes before cooking so it comes closer to room temperature. Using a sharp knife, slice the lobe into 4 medallions about 3/4-inch thick. Pat each medallion dry with paper towels to remove excess moisture.
Season & (optional) Dust
Lightly season both sides of each medallion with kosher salt and freshly ground black pepper. If you prefer a light crust and easier browning, very lightly dust each side with the tablespoon of flour, shaking off any excess.
Sear
Heat a heavy skillet (preferably cast iron) over medium-high heat until hot but not smoking. No additional oil is necessary; the foie gras will render fat. Place the medallions in the dry skillet, leaving space between them. Sear without moving for 45–60 seconds until a deep golden-brown crust forms, then flip and sear the second side for 30–45 seconds. The goal is a caramelized exterior while keeping a buttery, soft interior; foie gras cooks quickly. Remove medallions to a plate lined with paper towel to drain excess fat and rest for 1–2 minutes.

Warm the pan
After removing the foie gras medallions, carefully pour off or spoon out all but about 1 tablespoon of the rendered foie gras fat from the skillet (reserve the fat for another use if desired). Reduce heat to medium and add 2 tablespoons of unsalted butter to the pan. Allow it to melt and foam gently.
Caramelize fruit
Add the diced apple to the butter and cook, stirring occasionally, for 2–3 minutes until the apple begins to soften. Sprinkle the granulated sugar over the apples and stir; cook for another 1–2 minutes until the sugar melts and the apples take on a light caramel color. Add the halved grapes and cook for 1–2 minutes until grapes begin to blister slightly.
Deglaze & finish
Stir in the honey and the 2 tablespoons of dry sherry or Sauternes (or substitute orange juice). Scrape any browned bits from the bottom of the pan. Add 1 teaspoon lemon juice, 1/2 teaspoon thyme leaves (if using), and season with 1/4 teaspoon sea salt and a pinch of freshly ground black pepper. Cook for another 30–45 seconds until the liquid reduces slightly and coats the fruit. Taste and adjust seasoning.
Assembly & Finishing
Toast the brioche or bread slices until warm and lightly crisp. Arrange one slice per serving on plates.
Place a warm foie gras medallion on each toast. Spoon a generous portion of the warm caramelized apple and grapes beside or partially over the foie gras so the juices mingle with the meat.
Drizzle each medallion lightly with 1/4 teaspoon aged balsamic or reduced balsamic glaze for brightness (total ~1 teaspoon used across servings). Garnish with microgreens or small thyme sprigs. Serve immediately so the foie gras remains tender and the fruit warm.
