Prep crème fraîche
Place the crème fraîche in a chilled bowl. Stir in the finely chopped chives and add 1 tablespoon of room-temperature unsalted butter to lend a silkier mouthfeel. Taste and season very lightly with a pinch of fine sea salt and a grind of white pepper. Keep refrigerated until plating.
Butter smear
Set the remaining 1 tablespoon of butter on the counter to soften slightly. When ready to assemble, smear a thin layer (about 1/2 teaspoon) of butter on each blini or toast round. This creates a glossy, rich barrier that keeps the base from becoming soggy and adds flavor contrast with the caviar.
Caviar handling
Keep the caviar chilled until the moment of service. Using a mother-of-pearl spoon or a non-metal spoon, gently lift small portions of caviar (about 1/4 oz / 7–8 g per bite). Metal utensils can impart an off-flavor; avoid pressing or crushing the eggs—handle gently so the pearls remain intact.
Lemon and finish
Zest the lemon with a fine microplane just before plating. Cut into quarters for guests who prefer a spritz. Have microgreens or dill available for optional garnish.

If using blini: warm them gently in a dry skillet over very low heat for 30–60 seconds each side until just warmed through. If using toasted rounds: lightly toast and allow to cool slightly. Serve immediately on a chilled platter. Provide mother-of-pearl or plastic spoons for serving and small chilled plates for guests. Encourage tasting without heavy salt—caviar is best appreciated with minimal seasoning.
