Preparation
Chill and mise en place
Place the jar or tin of Ossetra caviar in the coldest part of your refrigerator for at least 30 minutes before serving so it is well chilled but not frozen. Chill the serving bowl or small individual dishes in the refrigerator or on a bed of crushed ice. Finely snip chives, mince shallot, and zest the lemon. Prepare blini or toasts and set aside.
Crème fraîche mix
Gently fold crème fraîche
In a small bowl combine 1 cup chilled crème fraîche with the minced shallot, 1 tablespoon snipped chives, lemon zest, and 1/2 teaspoon freshly ground black pepper. Stir gently to combine. Taste and adjust seasoning; keep chilled until service. This acts as a cool creamy base that complements but does not overpower the caviar.
Blini and toasts
Warm blini/toasts
If using frozen or refrigerated blini, warm them briefly in a nonstick skillet over low heat with a light brush of melted unsalted butter (about 1–2 minutes per side) until just warm and tender. If using melba toasts, light warming in a 300°F (150°C) oven for 3–5 minutes will loosen the dryness. Keep warm covered with a clean towel for up to 15 minutes; do not overheat.
Plating and serving

Place the chilled bowl of crème fraîche in the center of a serving platter or on a small bed of crushed ice. Spoon the caviar from its tin into a small nonmetal serving spoon or mother-of-pearl spoon (metal can affect flavor). Do not stir the caviar; transfer gently to preserve pearls.
Garnish and portion
Spoon 1/2 to 1 teaspoon of crème fraîche onto each blini or toast. Top with 3–5 grams (roughly a small mound) of Ossetra caviar per piece — roughly 1/2 to 1 teaspoon per blini. Sprinkle with a few grains of minced shallot, a pinch of grated egg yolk, a small dot of egg white if using, and a few snips of chive. Add a tiny squeeze of lemon if desired and a single caper or microgreen for contrast on selected pieces.
Serve immediately
Serve the caviar immediately while chilled, offering lemon wedges, additional crème fraîche, grated egg yolk/white, chopped capers, and chilled vodka or champagne on the side. Instruct guests to take small bites to savor the texture and flavor. Leftover caviar should be covered tightly and returned to the coldest part of the refrigerator and consumed within 24–48 hours for best quality.
