Fries
Prep potatoes
Wash the russet potatoes thoroughly. Cut into 10–12 mm (about 3/8–1/2 in) batons for classic fries. Keep sizes uniform so they cook evenly.
Rinse and soak
Place the cut fries in a large bowl and cover with cold water. Add the tablespoon of vinegar and 1 tablespoon kosher salt, stir, and soak for 30–45 minutes at least (or refrigerate up to 4 hours). This removes surface starch and helps crispness.
Dry thoroughly
Drain the potatoes and transfer to a clean kitchen towel or paper towels. Pat completely dry — any surface moisture will cause oil spatter and reduce crispness.
Hold and serve
Keep fries warm in a 200°F (95°C) oven on a rack set over a sheet pan while finishing remaining batches for consistent texture. Serve hot so the contrast with the caviar is optimal.
Dipping Sauce (Crème Fraîche & Dijon)
In a small bowl combine crème fraîche, Dijon mustard, mayonnaise, fresh lemon juice, finely minced shallot, and chopped capers. Season with 1/4 tsp salt and 1/4 tsp freshly ground black pepper. Stir until smooth and taste; adjust acidity with another 1/2 tsp lemon juice or salt if needed. Chill for at least 15 minutes to let flavors meld.
Assembly — Caviar & Garnish
Place a generous portion of hot fries on a warm serving platter. Spoon a small quenelle or 1/2 tsp dollop of the chilled dipping sauce onto the platter beside the fries for each serving.
Carefully spoon the Kaluga caviar into a small nonreactive bowl (mother-of-pearl spoon if available) and place next to the fries and sauce. Alternatively, for a luxe single-bite presentation, place a small dollop (about 1/2 tsp) of crème fraîche sauce on a fry and top with a scant 2–3 g of caviar, finish with a tiny pinch of lemon zest and a few snipped chives.
Garnish the platter lightly with remaining chives and a dusting of lemon zest. Serve immediately so the fries are hot and crisp while the caviar remains cool and delicate.
