Prepare butter-herb mixture
Soften the unsalted butter at room temperature until spreadable (about 20–30 minutes) or gently warm it in a small saucepan over very low heat just until softened. In a bowl, combine softened butter with the minced garlic, minced shallot, chopped parsley, chopped chives, minced thyme (if using), lemon zest, lemon juice, dry white wine, salt, and freshly ground black pepper. Mix thoroughly until homogenous. Taste and adjust seasoning — the mixture should be bright, garlicky, and herb-forward.
Prep escargots
If using canned/jarred escargots, drain them well and pat dry with paper towels. If any pieces are large, cut them in half so that each snail fits easily into an escargot shell or an escargot pan well. Reserve on a plate.
Assemble in shells or pan
If you have empty escargot shells: place a small amount (about 1/2 tsp) of the herb butter into the bottom of each shell, insert one escargot, then top with another 1/2–3/4 tsp of the herb butter to fill the shell. If using an escargot baking dish, place one snail into each well, spoon about 3/4–1 tsp of herb butter over each, and sprinkle a tiny pinch of breadcrumbs on top if you like a crunchy finish.
Bake
Preheat the oven to 375°F (190°C). Arrange the filled shells on a baking sheet or place the escargot pan directly on a baking sheet for stability. Bake for 10–12 minutes, until the butter is bubbling and the tops are lightly golden (avoid overbrowning). If you used a broiler for a crisp top, broil on high for 30–60 seconds while watching closely.
Notes
All ingredients in the butter mixture correspond to the escargot assembly and baking steps. If you prefer a more intense garlic flavor, increase minced garlic to 4 cloves. To prepare ahead, make the herb butter up to 24 hours in advance and keep refrigerated; bring to room temperature before assembling and baking.
