Prepare service area

Place a small shallow bowl or ramekin in a larger bowl filled halfway with ice cubes and cold water to create an ice bath for the caviar; set aside. This keeps the caviar chilled while plating.

Warm the blini

Gently warm the mini blini in a skillet over low heat 30–45 seconds per side or in a 300°F (150°C) oven for 4–6 minutes until just warm. Do not overheat; they should be pliable and not browned. Keep them covered with a clean towel so they remain soft.

Butter and season blini

Melt the unsalted butter in a small pan or microwave until just liquid. Lightly brush or dot about 1/4 teaspoon of melted butter on each warm blini. Sprinkle a very small pinch of fine salt over the buttered blini if desired (total ~1/8 tsp distributed).

Mix crème fraîche garnish

In a small bowl, combine the crème fraîche with the finely snipped chives and lemon zest. Stir gently to incorporate and taste; adjust with a tiny pinch of salt if needed. Transfer to a small piping bag or spoon for plating.

Chill the caviar

Place the sealed tin or jar of Ossetra caviar in the prepared ice bath for 2–3 minutes to bring it to service temperature (keeps it cold but not frozen). Using a non-metallic spoon (mother-of-pearl or plastic), gently stir the caviar once to loosen the eggs.

Assemble the crowns

On a chilled small serving plate, arrange the warm buttered blini in a circular 'crown' — 6 blini overlapping slightly. On each blini, pipe or spoon a dollop (~1/2 tsp) of the crème fraîche mixture into the center. Using the non-metallic spoon, place roughly 1/8 oz (about a heaping 1/2 teaspoon) of Ossetra caviar on top of each crème fraîche dollop, forming a small 'crown' of caviar on each blini.

Finish and garnish

Sprinkle each crown with a few snips of chive and a light dusting of freshly cracked black pepper if using. Add one microgreen sprig atop or beside each crown for visual height. Keep the assembled plate on the chilled bowl or serve immediately so caviar remains cold.

Serve

Present the crown of Ossetra caviar to guests with mother-of-pearl spoons and chilled vodka or dry champagne if desired. Encourage guests to eat each crown in one bite to enjoy the contrast of warm blini, cool crème fraîche and pop of caviar.
