Method

Refrigerate caviar until serving. Keep in its tin on a bed of crushed ice if serving platter will sit out longer than 10 minutes. Transfer crème fraîche to a small chilled bowl and fold in 1 tablespoon finely snipped chives; refrigerate until service.
Arrange lemon wedges in a small bowl or on the platter. Place the caviar tin closed on the platter until ready to serve; open at the last moment and transfer to a mother-of-pearl or non-metal spoon for plating (metal can alter flavor).
Blinis
Whisk together flour, baking powder, sugar, and salt in a medium bowl.
Heat a nonstick skillet over medium-low heat and brush with a little melted butter. Spoon 1 tablespoon portions of batter into the skillet to form small 2–2½ inch blinis. Cook until bubbles form on top and edges look set, 1–1½ minutes, then flip and cook 30–45 seconds until golden. Keep cooked blinis warm in a low oven (200°F / 95°C) on a rack so bottoms stay crisp. Yield: about 24 blinis.
Before serving, warm a few blinis slightly if chilled. Top each blini with a small dollop (about 1 tsp) of crème fraîche, a spoon of caviar (about 1/4 tsp), and a sprinkle of chives.
Oysters & Shrimp
Prepare mignonette: finely mince 2 tablespoons shallot and stir into 1/3 cup red wine vinegar with 1/4 tsp sugar and a pinch of salt. Refrigerate until service.
Shuck oysters just before serving, preserving as much liquor as possible. Arrange oysters on a large platter over crushed ice. Provide small spoons and half lemon wedges. Offer mignonette, cocktail sauce, and a small bowl of melted butter on the side if desired.
Chill cooked shrimp until cold. Arrange shrimp on the platter with ice and provide cocktail sauce in a small bowl. For a luxe touch, place a tiny spoonful (about 1/8 tsp) of crème fraîche on a blini and top with a shrimp and a small dab of caviar.
Deviled Eggs
Peel eggs and halve lengthwise. Remove yolks and place in a bowl. Mash yolks with mayonnaise, Dijon, white wine vinegar, salt, and pepper until smooth and creamy. Taste and adjust seasoning.
Pipe or spoon the yolk mixture back into the 12 egg white halves. Lightly dust with smoked paprika. For plating, top 6 of the eggs with a tiny quenelle (about 1/4 tsp) of crème fraîche and a small spoonful (about 1/8 tsp) of caviar; garnish with microgreens or a dill sprig.
Truffle Chips & Garnish
Place potato chips in a bowl, drizzle with white truffle oil, and toss gently to coat. Sprinkle with fine sea salt to taste. Arrange chips on the platter near the blinis.
Scatter microgreens or dill sprigs across the platter for color and aroma. Ensure small spoons, mother-of-pearl spoons, and napkins are provided for guests to build bites without metal contact with the caviar.
Plating & Service
On a large chilled serving platter or board, arrange crushed ice for oysters and a raised area for blinis and deviled eggs. Place oysters on ice, cluster blinis (warm) with a small bowl of crème fraîche and caviar nearby, arrange deviled eggs attractively, add shrimp with cocktail sauce, and tuck truffle chips into a small bowl or paper cone.
Serve immediately once caviar tin is opened and placed with non-metal spoons. Guide guests to pair small amounts of caviar with crème fraîche, blini, or egg — avoid mixing with strong metal utensils or acidic sauces in large amounts.
