Chill and prepare
Place the unopened tin of osetra caviar in the coldest part of the refrigerator at least 1 hour before serving. Use a nonmetallic spoon (mother-of-pearl, bone, or plastic) to avoid altering flavor when serving.
Mix crème fraîche: In a small bowl, combine the crème fraîche, finely chopped chives, minced shallot, and a pinch (about 1/4 tsp) of salt. Taste and adjust seasoning with black pepper (use sparingly). Transfer to a chilled serving dish and keep refrigerated until ready to serve.
Arrange lemon wedges and optional accompaniments (grated hard‑boiled yolk, dill sprigs, crackers/toast points) on a serving board near the caviar and blinis so guests can assemble themselves.
Blinis
Bloom yeast and mix batter
In a small bowl, combine warm water (about 110°F / 43°C), yeast and the teaspoon of sugar. Stir and let sit 5–8 minutes until foamy. In a medium bowl, whisk together the flour and salt. In a separate bowl, whisk the egg yolks with the 3 tablespoons milk (or buttermilk) and the melted butter. Stir the foamed yeast into the yolk mixture, then fold into the flour until a thick batter forms. Cover and let rest 30–45 minutes in a warm place — batter should show small bubbles and soften.
Whip egg whites
Lightly beat the egg whites with a pinch of salt until soft peaks form. Gently fold one-third of the whipped whites into the batter to loosen it, then carefully fold in the remaining whites until just combined. The batter should be airy but not deflated.
Cook blinis
Heat a nonstick skillet over medium-low heat and brush with a little melted butter. Spoon about 1 tablespoon of batter per blini into the skillet (for 2–2.5 inch blinis). Cook 1–1.5 minutes until bubbles appear on the surface and edges look set, then flip and cook another 30–45 seconds until golden and cooked through. Transfer to a wire rack and keep warm in a low oven (about 200°F / 95°C) while you finish the batch. Yield: about 24 small blinis.
Assembly & Service
Bring caviar out of refrigerator 5 minutes before serving so it is slightly less cold (but still chilled). Open the tin and spoon the caviar into a chilled serving bowl using a nonmetallic spoon.
To serve: Place a small dollop (about 1/2 teaspoon) of crème fraîche on a warm blini, top with about 1/2 teaspoon of caviar, and finish with a tiny sprinkle of grated egg yolk or a single chive tip if desired. Provide lemon wedges at the table for guests who prefer a faint squeeze. Offer crackers or toast points as an alternative base.
Storage: Keep unopened caviar refrigerated. Once opened, cover tightly and use within 48–72 hours for best quality. Refrigerate crème fraîche and blinis separately; blinis are best served freshly made or briefly warmed.
