Method
Ladyfingers and Coffee Soak
Brew 1 cup strong espresso or coffee. While still hot, stir in 1 tablespoon granulated sugar until dissolved. Add optional 3 tablespoons coffee liqueur and stir to combine. Set the coffee soak aside to cool slightly (hot but not boiling).
Briefly dip each ladyfinger, one at a time, into the warm coffee for 1–2 seconds per side — do not soak; they should be moistened but not falling apart. Lay dipped ladyfingers in a single layer to form the first layer in a 9x9-inch (or similar) dish. Reserve any remaining coffee soak.
Mascarpone Tres Leches Mixture
Cooked Egg-Yolk Base (safe and silky)
In a heatproof bowl, whisk together 4 egg yolks and 3 tablespoons granulated sugar until smooth and slightly pale. Set the bowl over (not touching) a simmering pot of water (double-boiler). Whisk constantly for 5–7 minutes until mixture thickens slightly and reaches 160°F (71°C) on an instant-read thermometer, which pasteurizes the yolks. Remove from heat.
Pour about half of this mascarpone-tres leches mixture evenly over the first layer of soaked ladyfingers, using the back of a spoon to spread gently so the layer is even and the ladyfingers absorb some of the liquid. Arrange a second layer of dipped ladyfingers on top, then pour the remaining mascarpone-tres leches mixture over them, spreading gently to cover fully.
Whipped Cream Topping
Chill a medium bowl and beaters for 10 minutes if possible. Pour 1 cup cold heavy cream into the bowl with 2 tablespoons powdered sugar and 1/2 teaspoon vanilla extract. Whip at medium-high speed until soft peaks form (about 2–3 minutes). Do not overwhip; you want a light, billowy cream.
Spread the whipped cream evenly over the top of the assembled dish, creating a smooth layer for dusting.
Finishing and Garnish
Sift 2 teaspoons unsweetened cocoa powder lightly over the whipped cream to create the classic tiramisu look. Scatter 1 tablespoon dark chocolate shavings if using.
Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, preferably 8–12 hours or overnight. Chilling lets the ladyfingers fully absorb the tres leches mixture and the flavors meld.
When ready to serve, allow tiramisu to sit at room temperature 10–15 minutes for easier slicing. Serve chilled. Leftovers will keep covered in the refrigerator for up to 3 days.
