Chill glass (optional)
If desired, place the glass in the freezer for 5–10 minutes or fill with ice water for 2 minutes to chill it, then discard ice/water. A chilled glass keeps the sparkling water colder longer.

Add 6 ice cubes to the prepared glass. Adjust amount of ice to personal preference; fewer cubes preserve more carbonation against dilution.
Pour Sparkling Water

Open one chilled bottle of San Pellegrino sparkling water gently to preserve effervescence. Hold the bottle at a slight angle and pour slowly down the side of the glass to reduce foam and keep bubbles fine.

Fill the glass leaving about 1/2 inch (1 cm) of headspace to allow bubbles to rise without overflowing.
