Marinate chicken
Pat chicken breasts dry with paper towels. In a bowl, whisk 2 tbs olive oil, 1 tsp minced garlic, 1 tbs lemon juice, 1 tsp kosher salt and 1/2 tsp black pepper. Add chicken and coat thoroughly. Let marinate at room temperature for 15 minutes or refrigerate up to 2 hours.

Grill chicken
Place chicken on the hot grill and cook 5-7 minutes per side, until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Avoid pressing on the chicken to retain juices.

Rest and slice
Transfer chicken to a cutting board and let rest 5 minutes. Slice chicken thinly or into bite-sized strips against the grain.
Caesar Dressing

Combine dressing ingredients
In a medium bowl, whisk together 1/2 cup mayonnaise, 2 tbs Greek yogurt, 1 tsp anchovy paste, 1 tbs lemon juice, 1 tsp Dijon mustard, 1/2 tsp Worcestershire sauce, and 1 tsp minced garlic until smooth.

Emulsify
While whisking, slowly stream in 2 tbs olive oil to emulsify. Season with 1/4 tsp black pepper and 1/4 tsp kosher salt. Taste and adjust lemon, salt, or anchovy to preference. If dressing is too thick, thin with 1-2 tbs water or more lemon juice.
Assemble Salad

Prepare greens and tomatoes
Place 6 cups chopped romaine into a large bowl. Add 1 cup halved or sliced tomatoes and 1 cup croutons.

Dress the salad
Pour about 3/4 of the dressing over the greens (reserve some to serve). Toss gently but thoroughly to coat the leaves evenly. Add more dressing if desired, a little at a time to avoid overdressing.

Add chicken and cheese
Top the dressed salad with the sliced grilled chicken and sprinkle 3/4 cup Parmesan over the top. Toss gently once more or leave arranged on top for presentation.

Serve
Divide the salad among 4 plates, finish with the remaining Parmesan and a few extra croutons. Optionally, grind additional black pepper and serve any extra dressing on the side.
