Method
Toast & Bread
- 1
Prepare and toast the bread
Heat a skillet over medium or preheat a toaster. Spread 1 tbs butter evenly over both slices. If using skillet: place buttered bread butter-side down in skillet and toast 1–2 minutes per side until golden and crisp. If using toaster: toast to desired doneness, then rub the cut side of a halved garlic clove across the hot toast (or spread a light smear of garlic paste) while still warm to infuse garlic flavor.
Avocado Topping
- 2
Make avocado mash
Halve, pit, and scoop the avocado into a bowl. Mash with a fork to your preferred texture (slightly chunky or smooth). Stir in 1 tsp lemon juice, 1 tsp olive oil, 1 tsp salt, 1/2 tsp black pepper, and 1/4 tsp red pepper flakes (if using). Taste and adjust seasoning. Keep warm or room temperature until assembly.
Eggs
- 3
Cook eggs (two-egg sunny-side or over-easy)
Heat a nonstick skillet over medium-low and add 1 tsp olive oil or butter. Crack the two eggs into the pan (or crack into a small bowl first and slide in). Cook gently for 2–3 minutes until whites are set. For sunny-side-up: cover pan with a lid for 30–60 seconds to finish the tops while keeping yolks runny. For over-easy: once whites set, carefully flip and cook 10–20 seconds. Season eggs with 1/4 tsp salt and a pinch of pepper. Remove from heat and keep warm.
