Preparation
Warm and measure
Preheat the espresso machine group head and cup by running a blank shot or pouring hot water into the cup; discard water. Place your portafilter on a scale and tare to zero.
Weigh 18–20 g of fresh organic whole espresso beans (use 20 g for a slightly stronger/ristretto-style shot).
Grind beans to a fine espresso grind. Aim for a grind that yields a 25–30 second extraction for ~30–40 ml of liquid when pulled (for a 1:2 brew ratio). Adjust grind finer if extraction is too fast, coarser if too slow.
Dosing, Tamping & Extraction
Dosing and distributing
Dose the ground coffee into the portafilter basket (18–20 g). Use a distribution tool or gently shake/tap to level the grounds so the puck will be even.
Tamping
Using a tamper, press the grounds evenly with firm pressure (approximately 30 lbs/13.6 kg of force). Polish the surface with a slight twist to create a smooth puck. Wipe any loose grounds from the rim.
Flush and lock in
Purge a short burst of water through the group head to stabilize temperature and remove old grounds. Lock the portafilter into the group head immediately after tamping.
Pull the shot (espresso)
Start the extraction and time it. Aim for a 25–30 second extraction to yield about 30–40 ml (single-ish) or 40–50 ml (long single/double depending on your dose). Stop the shot when the desired volume/time is reached. You should see a rich caramel-colored crema atop the espresso.
Serve as Espresso
Prepare as Americano
For a hot Americano: heat 90 ml filtered water (to about 85–92°C). Pour the espresso shot into a 180–240 ml cup, then add 90 ml hot water to the shot gently to preserve crema as much as possible. Adjust water volume to taste (standard is 1:2 or 1:3 espresso-to-water ratio).
Final Adjustments & Cleaning
Taste and adjust: if the coffee tastes too strong or bitter, add hot water for an Americano or try a coarser grind / shorter extraction next time. If too weak, use slightly more dose or finer grind. Sweeten or add milk to taste.
Clean up: knock out the used puck, rinse the portafilter, and wipe the group head. Backflush the machine as recommended by the manufacturer at the end of the day.
