Preheat and prep

Preheat your waffle iron according to manufacturer instructions. Lightly brush or spray the waffle iron with butter or oil.

Mix dry ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

Combine wet ingredients

In a separate bowl, beat the eggs lightly. Add the whole milk, melted butter, and vanilla extract and whisk until smooth.

Make batter

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few small lumps are fine. Let the batter rest 5–10 minutes while the waffle iron finishes preheating.

Cook waffles

Spoon or pour the recommended amount of batter into the preheated waffle iron (typically 1/2 to 3/4 cup depending on size). Close and cook until golden brown and crisp, about 3–5 minutes, or per your waffle iron's instructions. Transfer cooked waffles to a wire rack in a warm oven (100–120°C / 210–250°F) to keep crisp while you finish remaining waffles.

Mixed Berries Compote

Combine berries and sugar

In a small saucepan, combine the quartered strawberries, blueberries, mixed berries, granulated sugar, and water. Stir to distribute the sugar.

Simmer

Place the saucepan over medium heat. Bring to a gentle simmer, stirring occasionally. After 3–5 minutes when the berries begin to release juices, reduce heat to low.

Reduce and finish

Continue to simmer for another 5–8 minutes until the sauce thickens slightly and some berries have broken down but there are still whole berry pieces. Remove from heat and stir in lemon juice and vanilla extract. Taste and adjust sweetness if needed (add up to 1 tbs more sugar). Let the compote cool slightly; it will thicken a bit more as it cools.

Whipped Cream & Assembly

Make whipped cream

Chill a medium bowl and beaters (optional) in the fridge for 10 minutes. Pour the heavy cream into the chilled bowl, add powdered sugar and vanilla extract. Whip at medium-high speed until soft to medium peaks form, about 2–3 minutes. Do not overbeat.

Prepare fruit for topping

Slice the reserved fresh strawberries and set aside the blueberries for topping. Keep them chilled until serving.

Plate the waffle

Place a warm waffle on each serving plate. Spoon 3–4 tbs of the warm mixed berries compote over the center of each waffle, letting some run over the edges.

Add ice cream and whipped cream

Top each compote-covered waffle with one generous scoop of vanilla ice cream. Add a dollop (about 2 tbs) of whipped cream next to or on top of the ice cream.

Finish and garnish

Scatter the sliced strawberries and fresh blueberries over the waffle and around the ice cream. Garnish with a mint leaf if using. Serve immediately while waffles are crisp and ice cream is cold.
