Prepare Strawberries
Inspect and rinse
Choose bright red, fragrant strawberries with fresh green caps. Discard any that are bruised or moldy. Place the selected strawberries in a colander and rinse gently under cool running water for 10–15 seconds to remove dirt and debris.
Hull
Use a small paring knife or a strawberry huller to remove the green cap and core. Insert the tip just under the green leaves and twist out the hull, or push a straw through the bottom to pop the hull out. Do this for all berries.
Slice
Place strawberries on a cutting board and slice them to the desired size: halves or quartered for a salad/side, or thick slices for a simple dessert. For 1 cup sliced berries, slice about 6 medium strawberries.
Flavor & Serve
Quick maceration
Put the sliced strawberries in a small bowl. Sprinkle the granulated sugar evenly over them, then drizzle the lemon juice. Gently toss to combine. Let sit at room temperature for 10 minutes to draw out juices and slightly sweeten the fruit (maceration).
Assemble
After macerating, taste and adjust: add another dash of lemon or a pinch more sugar if needed. Transfer strawberries to a serving dish. Garnish with the extra whole strawberries and tuck mint leaves between berries if using.
Storage
If not serving immediately, cover the bowl tightly and refrigerate for up to 24 hours. Macerated strawberries will release more juice over time; stir before serving.
