Chill glass

Place a champagne flute in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail. Empty the ice water before pouring.

Mix base

Add gin, fresh lime juice, and simple syrup to a cocktail shaker. Fill the shaker with ice (about 3/4 full).

Shake

Shake vigorously for 10–12 seconds until the shaker is well-chilled and slightly frosted.

Strain

Double-strain the mixture into the chilled champagne flute to remove ice shards (use a Hawthorne and a fine mesh strainer or just the shaker strainer).

Top with bubbles

Slowly top the drink with 3 oz chilled Champagne or other dry sparkling wine. Pour gently down the side of the glass to preserve effervescence.

Garnish

Express a lime twist over the glass to release oils, then drop the twist into the drink or perch it on the rim.

Serve

Serve immediately while the Champagne is lively.
