Whipped Coffee
Combine ingredients
In a medium mixing bowl combine 3 tsp instant coffee, 3 tsp granulated sugar and 3 tsp hot water. Hot water should be just off the boil — very hot helps dissolve and aerate the mixture.
Whip
Using a hand whisk, electric hand mixer, or stand mixer fitted with the whisk attachment, whip the mixture. If using an electric mixer, whip on medium-high for 2–4 minutes. If whisking by hand, whisk vigorously for 6–10 minutes. Stop when the mixture becomes thick, glossy and forms stiff peaks and holds its shape when the whisk is lifted.
Adjust sweetness/texture
Taste a small amount on a spoon. If you want it sweeter, add up to 1 tsp sugar and whip briefly to incorporate. If too stiff, add a few drops of hot water and fold to adjust consistency.
Cup Assembly - Iced
Fill a tall glass about 3/4 full with milk (approximately 1 cup) and add ice cubes to fill the glass. Optional: stir in 1/8 tsp vanilla extract into the milk.
Spoon or dollop the whipped coffee mixture on top of the milk and ice, creating a layered effect. Use the back of a spoon to spread slightly if desired.
Before drinking, gently swirl the whipped coffee into the milk to combine or leave layered and sip through the foam. Dust lightly with cocoa powder or a pinch of instant coffee if desired.
