Make patty mixture

In a large mixing bowl combine ground chicken, breadcrumbs, egg, minced onion, minced garlic, Worcestershire sauce, Dijon mustard, chopped parsley, paprika, kosher salt, and black pepper. Use your hands or a spatula to gently mix until just combined — do not overwork (about 30–45 seconds). If the mixture feels too wet, add up to 2 more tablespoons of breadcrumbs; if too dry, add 1 tablespoon water or a splash of milk.

Form patties

Divide the mixture into 4 equal portions (about 4 oz / 110 g each). With lightly oiled hands, shape each portion into a 3.5–4 inch round patty about 3/4 inch thick. Press a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Cook patties

Heat a large nonstick or cast-iron skillet over medium-high heat. Add 2 tablespoons olive oil and let it warm until shimmering. Add patties (do not overcrowd — cook in batches if necessary). Cook for 4–5 minutes on the first side without moving so a crust forms. Flip and cook 3–4 minutes on the second side until internal temperature reaches 165°F (74°C). If using cheddar, place a slice on each patty in the last 1 minute of cooking and cover the pan to melt.

Rest patties

Transfer cooked patties to a plate and tent loosely with foil. Let rest 3–5 minutes before assembling to retain juices.

Make burger sauce

In a small bowl combine mayonnaise, ketchup, and yellow mustard. Stir until smooth and taste; adjust seasoning with a pinch of salt and pepper if desired.

Toast buns

Spread butter evenly on the cut sides of the buns. In a clean skillet over medium heat, toast buttered sides down until golden brown, about 1–2 minutes. Alternatively, toast under a broiler for 30–60 seconds, watching closely.

Assemble burgers

Spread about 1 tablespoon of the burger sauce on the bottom half of each toasted bun. Place a lettuce leaf on the sauce, then a tomato slice, a cooked chicken patty (with melted cheese if using), 2 pickle slices, and a few rings of red onion. Spread another small amount of sauce on the top bun and place it on the stack.

Serve

Serve immediately while patties are warm with your choice of sides (fries, salad, or coleslaw). Provide extra sauce and pickles on the side if desired.
