Make espresso reduction
Combine the cooled espresso, brown sugar, and balsamic vinegar in a small saucepan. Bring to a gentle simmer over medium-low heat and reduce until slightly thickened and syrupy, about 6–8 minutes. Stir occasionally. Remove from heat and let cool to warm; the reduction will further thicken as it cools.
Prep bread and spreads
Split the ciabatta rolls horizontally and lightly toast cut sides under a broiler or in a skillet until just golden (about 1–2 minutes). Mix the softened butter with a pinch of salt and spread half on the cut sides that will be toasted. In a small bowl combine mayonnaise and Dijon mustard; set aside.
Assembling Sandwichs Espresso
Spoon about 1 tablespoon of the espresso reduction over the meat, distributing it evenly. Taste a small amount first — the coffee reduction should add a savory-sweet, slightly acidic note; adjust amount if you prefer milder coffee flavor.
Top the meat with one slice of provolone or fontina. If you prefer melted cheese, place the assembled bottom halves briefly under a broiler (about 1–2 minutes) or in a covered skillet over low heat until the cheese begins to melt.
Scatter the thinly sliced red onion over the cheese (about 1 tablespoon) and add tomato slices if using. Season veggies lightly with 1/8 teaspoon kosher salt and a pinch of freshly ground black pepper.
Spread the mayonnaise-Dijon mixture on the top half of each roll (about 1 tablespoon), then place the top half over the sandwich. Press gently to compact.
Serve
Cut the sandwich in half on the diagonal. Serve immediately while cheese is warm and espresso notes are fresh. Offer extra espresso reduction on the side for drizzling.
