Make the Dough

In a large bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling

In a bowl, combine the dulce de membrillo, cinnamon, and lemon juice. Mix well until smooth.

Assembly and Baking

Assemble the Hand Pies

Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles (approximately 5 inches in diameter). Place a tablespoon of filling on one half of each circle, fold over, and seal the edges with a fork. Repeat with remaining dough and filling.

Apply Egg Wash

Beat the egg with milk to create an egg wash. Brush the tops of the hand pies with the egg wash for a golden finish.

Bake

Place the hand pies on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
