Method
Roasted Banana Pudding
Roast the Bananas
Preheat the oven to 400°F (200°C). Place ripe bananas on a baking sheet and roast for 15-20 minutes until caramelized. Let cool, then mash.
Prepare Pudding Mixture
In a saucepan, combine heavy cream, whole milk, granulated sugar, and mashed bananas. Heat over medium until warm. In a separate bowl, whisk eggs and cornstarch together. Gradually add the warm mixture into the egg mixture, then return to the saucepan.
Cook the Pudding
Cook on low heat, stirring constantly until thickened (about 5-7 minutes). Remove from heat and stir in vanilla extract. Pour into serving dishes and refrigerate until set.
Banana-Sunflower Crumble
Make the Crumble
In a bowl, combine rolled oats, sunflower seeds, brown sugar, and a pinch of salt. Melt the butter and mix it into the dry ingredients until crumbly.
Bake the Crumble
Spread the crumble mixture on a baking sheet and bake at 350°F (175°C) for 15-20 minutes until golden brown. Let cool.

Make the Wafer Dough
In a bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs, and mix in vanilla extract. In another bowl, combine flour and baking powder, then gradually mix into the wet ingredients.
Bake the Wafers
Spoon the dough onto a baking sheet and flatten slightly. Bake at 350°F (175°C) for 10-12 minutes until lightly golden. Let cool.
